Hi Friends!

Can you believe it's already May? It feels like I was just emailing you about hearty warm soups for those colder, wet spring days and discussing the end of winter. Now we're here counting down until summer!

If you’re a parent, you might just be in the thick of "Maycember". You know, that end-of-spring flurry of activities that requires military precision, logistics and planning. Where we have 2 school concerts, a graduation, and 3 sports tournaments. Don't forget to about the dance recital later in the night and you volunteered to chaperone the field trip. Also, the next three weekes have themed dress-up days, there's 4 classroom parties, teacher appreciation gifts, and summer school or child-care planning. (I just know I forgetting someting and will definitely remember it at 3 a.m.) I personally have a love-hate relationship with the hustle and bustle of the almost-summer season. I thrive on that busyness that requires colored coordinated calendars, but I’d be lying if I didn’t admit that the idea of cooking dinner every single night on top of it all isn't just a little overwhelming.

So my tip for the rest of the month that I also follow... Don’t! Schedule one or two (or maybe even three!) days for takeout, or something incredibly simple like store-bought frozen dumplings or pizza with a pile of cut-up fruit and vegetables. For the other days, choose the most low-effort recipes in all the land, like those below. Many of them can be made in 30 minutes or less, and can be tucked into a thermal food jar and eaten on the way to your 87th activity.
